Remember, the can is only partially submerged, the dough itself never comes in contact with water (the way a dumpling does), and the majority of the pot is filled with steam. I'm sure you could do a version where the can came into contact with steam only, but this ain't it. Also, I can't think of many loaves of bread that bake for 2 hours, so obviously there's something rather different at play here (temperature, moisture, etc.).
